We love experimenting with oatmeal, but this is a classic we keep coming back to.
What you'll need:
-2 cups water
-3/4 cup conventional oats
-1 apple (get one that's good for baking -- fuji or honeycrisp are our favorites)
-2 tbsp. walnuts, chopped fine
-1 tbsp. butter, melted
-2 tbsp. cinnamon
-1 tbsp. brown sugar
-1 splash of vanilla extract
What to do:
Preheat oven to 400ºF.
Slice apple into fourths and remove core. With pastry brush, spread butter over apples (face up), and sprinkle 1 tbsp. of cinnamon over all. Bake for about 20 minutes or until soft.
Bring the water to a boil in a medium sauce pan. Turn heat to low and add oats, brown sugar, walnuts, vanilla and remaining 1 tbsp. of cinnamon. Stir continuously as oats start to absorb water -- will take about 20 minutes to fully absorb.
Chop the apple into cubes and add to the oatmeal when water is almost fully absorbed (10-15 minutes in). If you have excess, use as garnish!
Stir and enjoy alongside your favorite coffee. Good morning!
