This one is downright comfort food!
It's an adaption of a family recipe, re-made to fit our student budget when we were college.
We love it because no matter how far away we are from our friends and family, this one always reminds us of home.
What you'll need:
- 1/2 lb. Rotoni pasta
- 3/4 cup frozen peas
- 4 bacon strips
- 1 tbsp. butter
- 1/2 tsp. flour
- 1/2 cup half and half
- 1/8 cup grated parmesan cheese
- cracked pepper and shaved parmesan cheese for taste
What to do:
Cook the bacon strips. Blot of excess fat and chop into small pieces.
Meanwhile, boil the pasta to al dente. Steam peas over top the boiling water. Drain.
In a small sauce pan, melt the butter over medium heat. When melted, add the flour and whisk until mixture turns light brown. Gradually add half and half while whisking. Bring to a boil and begin to add parmesan gradually, whisking constantly. Boil for about 3 minutes, whisking occasionally.
Add all contents together and toss. Add cracked pepper and shaved parmesan over top plated pasta to your liking. We always plate in small portions so we can go back for seconds!
