Herb & Mushroom Omlette

We had no idea how wonderful fresh herbs paired with eggs until we had an herb omlette this past summer while vacationing near Glacier National Park in Montana. The bed & breakfast we stayed in made amazing food! Their omlette was a bit fancier than ours and was accompanied with homemade bread. Our variation tastes incredibly fresh and is a great way to start the day!

What you'll need: 

-4 eggs, beaten
-1 tbsp. milk
-4 leaves fresh basil, minced
-4 sprigs fresh oregano, minced
-1/8 tsp. cracked pepper
-1/8 cup chopped baby bella mushrooms
-enough butter to coat your pan
-1/4 cup shredded sharp cheddar cheese

What to do:

Over medium heat, melt butter in omlette pan. Mix all ingredients except cheese in a bowl. Pour enough for 1 omlette into pan. Flip halfway through, add cheese and fold in half. Repeat for second omlette. Plate with toast or fresh fruit.
