Mini Caprese Bites

This has got to be one of the easiest, quickest ways to have a gourmet lunch! Ever since we have been growing basil in our garden, we have been eating this on a weekly basis. It also makes a great appetizer to bring to social gatherings!
If you have access to a farmer's market where you can get fresh mozzarella, then you must use that for this dish. The fresher, the better!

What you need:

-5 slices of your favorite Italian bread (10 slices if it is baguette-style)
-1 tomatoe
-10 basil leaves
-10 cubes of fresh mozzarella
-olive oil (about 2 tbsp.)
-balsamic vinaigrette (about 1 tbsp.)

What to do:

Turn over to broil: high.

Cut bread slices in half to equal 10. Lay slices out on baking sheet, drizzle with olive oil. Broil for a few minutes in oven until golden brown.

Assemble basil, tomato and mozzarella on each bread slice. Drizzle with olive oil and balsamic vinaigrette. Bravo!
