Black Bean Frittata

Frittatas are great because they can be made for breakfast, lunch or dinner!

We have to admit that it took us a couple attempts to get this one just right. Lesson learned: add the black beans after the eggs are almost cooked. Nobody wants a green frittata!

What you'll need:
-5 eggs
-1/4 cup milk
-1 tbsp. butter or 2 tbsp. olive oil
-1/4 cup black beans
-3 scallions, chopped (both greens and whites)
-1 small tomato, chopped (inside mush removed)
-1/3 cup black beans
-1/4 cup crumbled feta cheese
-2 handfuls of alfalfa sprouts
-1 avocado
-salt and pepper to taste

What to do:
Preheat oven to 400ºF. Over low heat, melt butter (or olive oil) in a medium cast iron or stainless steel frying pan (make sure you have one that is oven-safe). Be sure to let melted butter cover entire bottom and sides of pan.

Beat eggs and milk together. Pour into frying pan and mix continuously over medium-low heat. Once egg is about halfway cooked (is forming into large curds), stir in feta, tomato, scallion and black beans.

Place frying pan in the oven and bake for at least 10-15 minutes or until egg is solid. Remove from oven and let cook for several minutes. Use a flexible spatula to loosen and remove frittata (it helps if you flip it upside down onto a plate). Cut into fourths and plate with avocado and sprouts.
