
So, here's our take on the classic Italian pasta dish!
What you'll need:
-1/2 lb penne pasta
-2-3 tbsp. olive oil
-1 small can pureed tomatoes (10-12 oz.)
-1 full tomato, chopped fine
-2 garlic cloves, minced
-1/4 cup vodka
-1/3 cup heavy cream
-4 sliced prosciutto
-10 basil leaves; 8 minced, 2 sliced fine
-2 sprigs oregano, minced
-3 sprigs parsley minced
-2 pinches shaved parmesan cheese
-salt and pepper to taste
What to do:
Prepare sauce first by heating 1 tbsp. olive oil in a medium sauce pan over medium-low heat. Add pureed tomatoes, garlic, 8 minced basil leaves, oregano and parsley. Heat for about 5 minutes or until bubbling.
In a frying pan over medium-high heat, drizzle olive oil and fry each side of prosciutto for 30-60 seconds. Chop into small pieces.
Turn saucepan to low heat. Add tomato, vodka, cream and prosciutto. Continue to heat, stirring occasionally for 20-30 minutes. Add salt and pepper to your liking.
Meanwhile, boil pasta in water and 1 tbsp, olive oil. Cook until al dente and strain. Add to sauce. Mix.
Pour into two pasta bowls. Garnish with remaining basil and shaved parmesan. Enjoy!
