Our Veggie Quiche

We love quiche because, much like our Black Bean Frittata, it is a meal that we can eat for breakfast, lunch, or dinner! We paired it with a light and fruity white wine like a Riesling to class it up for dinner, then ate the leftovers for breakfast the next morning. One baking session, two meals! Sounds good to us.

We recommend Fritz's Riseling as a nice and refreshing white wine that won't weigh down the meal and is easy drinking on a hot summer's day!

What you'll need:
-1 pie crust (use your favorite recipe or buy a roll-out dough from your grocer's refrigerated section)
-4 eggs, beaten
-1/8 cup milk
-1/2 tomato, sliced
-1/2 white onion, sliced thick
-2-3 big handfuls of fresh spinach
-2 cloves garlic, chopped
-2 sprigs fresh thyme
-1/8 cup grated parmesan cheese
-1/4 cup crumbled feta cheese
-a pinch of sugar
-1/2 tbsp. butter
-1 tbsp. olive oil
-salt and pepper to taste

What to do:

Preheat oven to 400ºF. Place tomato slices on roasting rack and brush with olive oil. Roast for 15 minutes.

In a frying pan, melt butter over low heat. Add onions and caramelize over medium heat for about 10 minutes. Add the pinch of sugar halfway through to help caramelize. Add garlic and spinach, raise heat and cover, stirring continuously until spinach has wilted.

Lay pie crust out in pie pan. Combine eggs, cheese and milk. Add vegetables and thyme and pour mixture into crust. Top with salt and pepper. Lower oven temperature to 375ºF and bake for 25 minutes, or until egg is solid in middle.

Serve alongside fresh fruit and enjoy!
