Peach Blueberry Crisp



Okay, this one is definetly not a perfect meal for two but it is one of those things that is just too good not to share!

Andrew just returned from a week of working in Atlanta and he brought 6 big, juicy, ripe Georgia peaches with him. This is what happened.

What you'll need:
-4 large peaches, sliced
-1+ cups blueberries
-1 cup flour
-1 cup old fashioned oats
-3/4 cup brown sugar
-1/2 cup granulated sugar
-1 tbsp. cinnamon
-1 stick butter, melted
-non-stick spray
-Vanilla ice cream

What to do:
Preheat oven to 375ºF. Spray 9"x13" glass baking pan with non-stick spray.

Mix flour, sugars, oats and cinnamon with butter until the mixture becomes crumby. Layer half the peach slices in the pan. Add half a cup of blueberries and half the crisp mixture. Add a second layer of peaches and berries, and cover in the remaining mixture. Bake uncovered for 45-60 minutes, or until the fruit juices are bubbling.

Add a scoop of vanilla ice cream and enjoy! The crisp will provide a generous dessert portion for up to 10 people. It also makes for a great breakfast.
