Here's a simple solution to spice up your breakfast! With an extra dose of spinach, this breakfast burrito gives you more than enough iron to take on the day!
What you'll need:
- 4 eggs, beaten
- 1/4 cup shredded mozzarella
- 2 slices provolone cheese
- 2 big handfuls of fresh spinach
- 1 thick slice of yellow onion, chopped
- 2 large spinach wraps
- 4 tbsp. your favorite salsa
- salt and pepper to taste
What to do:
In a large bowl combine eggs, mozzarella, spinach and onion. Scramble egg mixture in pre-greased pan over medium heat until egg is no longer runny. Salt and pepper as desired.
Place a moist paper towel over wraps and heat for 30 seconds in microwave (this make them more pliable and helps edges stick together). Lay 1 slice of provolone cheese in each wrap and pour the scrambled egg mixture over top, splitting accordingly. Top with your favorite salsa and roll up, folding edges in first.
