Peanut Chicken Lettuce Wraps

It's hard to beat refreshing lettuce wraps on a hot day. We made these from chicken we had marinated in teriyaki sauce and grilled the day before. It's a super quick and easy lunch to throw together for an afternoon in the back yard! We served the chicken warm but it would be just as good if it was prepared in advance and served cold.

What you'll need:
- 1/2 lb of grilled chicken breasts, sliced into strips (previously marinated in teriyaki sauce).
- 1/4 cup sesame oil
- 1 1/2 tbsp peanut butter
- 2 tbsp soy sauce
- 1/4 cup crushed peanuts
- 3 sprigs thyme
- 5-10 minced basil leaves
- 1/2 tsp red pepper flakes
- 1/4 tsp black pepper
- 1 pinch dried oregano
- 1 tbsp rice vinegar
- 1 head Boston lettuce, leaves pulled apart
- 1 carrot, shredded
- 1 cup alfalpha sprouts
- 1 avocado, sliced

What to do:
In a frying pan, combine sliced chicken, half of the sesame oil,  1 tbsp peanut butter, 1 tbsp soy sauce, panuts, thyme, basil and red pepper flakes. Sautee until warm.

In a small bowl, whisk together remaining sesame oil, peanut butter, soy sauce, rice vinegar, black pepper and dried oregano for dipping sauce.

Arrange on a large serving platter for a light afternoon lunch.
